20-Minute Lemon-Herb Salmon with White Beans (Low-Sodium)

Ingredients (serves 2)

  • 2 salmon fillets (about 5 oz each)
  • 1 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 lemon (zest and juice)
  • 1 tsp dried oregano
  • 1/2 tsp smoked paprika
  • 1 can (15 oz) no-salt-added white beans, drained and rinsed
  • 2 cups baby spinach
  • Black pepper and fresh parsley to finish

Instructions

  1. Pat the salmon dry and season with black pepper, oregano, and smoked paprika.
  2. Heat the olive oil in a skillet over medium-high heat. Sear the salmon 3 to 4 minutes per side, then set aside on a plate.
  3. In the same pan, soften the garlic for 30 seconds. Add the beans with a splash of water, scraping up the browned bits.
  4. Stir in the spinach until wilted, add the lemon zest and juice, and nestle the salmon back into the pan.
  5. Finish with parsley and one more squeeze of lemon.
