Here's what you'll need

  • 1 frozen banana
  • 2 tbsp almond butter
  • 2 tbsp shredded coconut, lightly toasted, plus more for topping
  • 1/2 cup plain Greek yogurt (or 1 scoop vanilla protein powder)
  • 1 cup unsweetened coconut or almond milk
  • 1/2 tsp vanilla extract
  • 4 ice cubes
  • Sliced almonds for the top

Here's how it comes together

  1. Toast the coconut in a dry pan 2 minutes until golden and fragrant; cool slightly.
  2. Blend the banana, almond butter, yogurt, milk, vanilla, most of the coconut, and ice until silky.
  3. Taste - a teaspoon of honey if your banana was underripe.
