Here's what you'll need
Pick large, firm sweet onions - Vidalia if you can get them - and slice thick.
- 2 large sweet onions, sliced into 1/2-inch rings
- 1 cup flour
- 1 cup buttermilk (or milk with 1 tsp vinegar)
- 2 cups panko breadcrumbs
- 1 tsp smoked paprika
- 1/2 tsp garlic powder
- Olive oil spray, salt and pepper
- Ketchup or a smoky yogurt dip to serve
Here's how it comes together
- Separate the onion slices into rings and pat dry.
- Set up three bowls: seasoned flour, buttermilk, and panko mixed with paprika and garlic powder.
- Coat each ring flour, buttermilk, then panko, pressing the crumbs on firmly.
- Arrange in a single layer, spray with oil, and air fry at 390 F (200 C) for 8 to 10 minutes, flipping once, until deep golden.
- Salt while hot and serve immediately.
